Whew, that was a mouthful! Honey, what’s for dinner tonight? I’m thinking about making spicy black bean & butternut squash burgers with a peanut veggie slaw….Wait, what did you say?
Trust me, the title of these is much more difficult than the actual recipe! I’d been craving black bean burgers lately and just happened to have some butternut squash leftover from making this, so I thought, why not just mash the two together into one beautiful veggie burger? So that’s exactly what I did. And in the process, I think I created my favorite homemade veggie burger to date. The roasted butternut squash added a hint of sweetness to the black beans while a little added cayenne kicked it up a bit. Also, I didn’t even end up needing to use an egg (or a flax egg) as a binder which has never happened before. After adding a bit of panko, the consistency was just perfect and held together beautifully when fried. Magic!
These veggie burgers are super versatile and could be prepared a number of ways–ketchup, barbecue, aioli, with bun, without bun, you get the picture–but I must say I’m pretty partial to the peanut broccoli,carrot, and onion slaw we made to go on top. I’ve been craving peanut sauce, so I had Jeff whip up a batch while I made the veggie burgers. He also painstakingly julienned each carrot and broccoli stem and slivered the almonds by hand instead of using the food processor like I would have…But I guess it looks prettier this way!
I wish I would of had the forethought to freeze a few of these patties, because I am definitely still dreaming about their spicy, sweet, veggie goodness. Ooh, and I added a bit of soy sauce to my bun and arugula on top of the burger in addition to the slaw–perfection!
Spicy Black Bean & Butternut Squash Burgers Recipe
Makes 2 burgers
1/2 can black beans (7.5 ounces)
1/2 cup roasted butternut squash (see here)
1 tablespoon shallot, diced
1 clove garlic, diced
1 green onion, chopped (green part only)
1/4 teaspoon salt
1/4 teaspoon pepper
1.5 teaspoons cayenne pepper
1 tablespoon lime juice
1/4 cup panko
Mash beans and butternut squash together in a bowl until combined.
Add shallot, garlic, green onion, salt, pepper, cayenne pepper, and lime juice and mix well, adjusting seasonings to your own preference.
Add panko and combine until burgers become sticky.
Form patties, fry immediately and serve with peanut veggie slaw (below), or freeze for later, and enjoy!
Time: 5 minutes
Peanut Veggie Slaw Recipe
Makes enough for 2 burgers
2 broccoli stems, thinly sliced
1 carrot, thinly sliced
2 green onions, chopped
5 almonds, thinly sliced
1/4 red onion, sliced
2 tablespoons water
1 tablespoon soy sauce
1 teaspoon brown sugar
1 teaspoon peanut butter
1/4 teaspoon chili paste
1/2 teaspoon lime juice
In a large bowl, combine broccoli, carrot, green onion, and almonds.
In a separate bowl, add water, soy sauce, brown sugar, peanut butter, chili paste, and lime juice. Mix well.
Add sauce to the slaw, and combine.
Serve on top of the spicy black bean and butternut squash burgers (above) and enjoy!
