Fresh Recipes | Avocado & Cheddar Grilled Cheese

Sometimes, you just need a grilled cheese for dinner. You can have all of these fancy, good intentioned dinner plans ready to go, but then you open the fridge, and you see the cheese…and it all ends there. Of course, to make yourself feel better, you don’t just make any ol’ grilled cheese–you want to dress it up a little. That’s when you see the avocado sitting on the counter. Inspiration strikes, and you’re suddenly, very, very excited for dinner.

When I was younger, I used to hate avocado. I made my mom serve it on the side because if it touched the salad, it would get its slime everywhere, and all would be ruined. There was one exception: cooked avocado. That would be my go-to line: Mom, you know I only like cooked avocado. Cooked avocado, you might ask? Yeah, I have absolutely no idea what I meant or where that came from, because I can guarantee you I never ate any cooked avocado.

Childhood excuse, meet grown-up reality. Delicious, creamy, cooked avocado-y reality: avocado and cheddar grilled cheese. Now I can finally say that I do like my avocado cooked! (and in a sauce, on my salad, with a spoon…)

Avocado & Cheddar Grilled Cheese Recipe

Makes 1 grilled cheese

Print recipe!

Ingredients:

2 slices sprouted wheat bread

3-4 slices sharp white cheddar cheese

4-5 arugula leaves

1 tablespoon dijon mustard

4-5 slices red onion

3-4 generous slices avocado

Steps:

Spread dijon mustard on one side of bread.

Add cheese, arugula, red onion, and avocado on one slice of bread, and place other slice of bread on top.

Either in a panini press or in a frying pan, cook both sides of the grilled cheese until cheese is melted and bread is toasted, about 4 minutes per side.

Serve immediately, and enjoy!

Time: 10 minutes
