I was absolutely terrified to make this recipe. Cheesecake has always seemed like that elusive thing that only real chefs could ever make right, and that I would be an utter failure for even attempting to make it. I’ve seen so many delicious looking variations–orange, cranberry, peppermint–and even went as far as making plans to make a few of them, but somehow, I always talked myself out of it. Issues much?
But, Jeff had bought a giant tub of cream cheese at Costco the other weekend and the container has just been sitting in the fridge, taunting me, daring me to turn it into cheesecake. And you know what? I sucked it up and did it.
I found a recipe on Joy of Baking. Do you know about this website? It’s an amateur baker’s/cook’s dream–step by step recipes, an introduction about common mistakes or pitfalls in the recipe, and often a video detailing the entire recipe! So I set out to prepare: I read the entire recipe at least 3 times, purchased all of my ingredients, and gave myself a little pep talk.
And then I dove right in and made it. I tried to follow the recipe exactly, down to the 30 second intervals between adding eggs to the batter. I did have a bit of trouble determining exactly when to take it out of the oven–the directions say when it is “firm and only the center of the cheesecake looks a little wet and wobbly”–just how much is a little wet and wobbly? This is probably where the video would have helped but alas, I was too lazy to watch it. I can read so much faster!
Also, you have to apply the sour cream topping to the “wet and wobbly” cheesecake and then let it bake for another 15 minutes–um exactly how do you spread something on a surface that isn’t hard? Hence the uneven surface in the picture.
After letting the cheesecake firm up in the fridge overnight, I was ready to take a bite–and it actually tasted like cheesecake! Hallelujah! It might not have been the prettiest cheesecake you’ve ever seen, but it’s given me the confidence to try another!
